Birthday Cake

Well I have had an interesting week.  I managed to throw away a whole cake and waste a lot of product.  But that was ok because I learned a valuable lesson.  I changed the recipe a little to much. Baking is exact!! It is a science therefore everything must be done in balance.

The difference between a Cake and Cupcakes is Density.  A cake is less dense moist.  It melts in your mouth. A cupcake has the same effect however, it is a little heavier.  Don't get me wrong you still want your cupcake as light and moist as a cake hence why you can use the same recipe to make cupcakes as cake.  Notice how I wrote that. A purely cupcake recipe must be carefully adjusted in terms of moist factor if you are to use your favorite cupcake recipe ie..Tiramasu, Champagne, Orange Dream yada yada.  Yes, these"typical cupcake" recipes can also be made into cake but just be careful of density.

My point i all this is I made my favorite cupcake recipe using buttermilk and eggs which is how I change a lot of my recipes to get a denser cake for my cupcakes well anyway the cake was a mess, it sunk was battery, overdone etc. So I started from scratch and remembered I was making a cake not cupcakes and the consistency of the batter matters!!

Decorations are cute but Taste is Everything!!!

White Cream Frosting
Rolled Fondant Flowers

Easter TIme

Hello Fellow Bakers,
So it is Easter time and time to be as creative as you want to be.  One of the things I have discovered is to buy a lot of candy to decorate.  Include sugar and candy you may not even think about to decorate.
So what have I made.
I tried my hand at the bunny cake not so bad.  I have to control my free hand.  I also made a cross cake pictures will be posted.  For my grandkids classroom I made cupcakes and decorated with yellow tinted frosting and added sugar accents to make them luciouzlickz!! Remember decorating is important but they have to taste as good as they look!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Cake Popz

So Cake Popz are all the latest rave. And I must admit once you get them right they are pretty darn tasty.
For those of you who know me you know I like my stuff from scratch it just taste better.  However, I found with cake pops scratch cakes are to moist (that is if you bake them correctly).
So that is my first advice, do not use a scratch cake unless it is a pound cake. The heavier the cake the better the pop.  So what should you use then.

Well according to all the experts and I am not one, remember I am a novice!!

1) Red Velvet (my personal favorite)- Remember resist the urge to make it from scratc!!
2) Pound Cake (Even a Sarah Lee might work)
3) Chocolate Cake (Remember dense none of that pudding in the middle stuff)
4) Leftover cupcakes (at least 6)
5) Scraps of cake (No burnt parts, must be at least 1/2 of a 9x12 pan

OREO COOKIES!!
Yup who would have believed it!!

Oreo cookies crumbled in a food processor and 8 oz of cream cheese.  I didn't include directions or quantities because it is all over the web. I am just sharing my experiences of what the experts think is easy or hard on this blog.
I will talk about the decorating thing.
